Spanish tapas have gained a foothold in American cuisine over the last two decades. After eating dates prepared at a now defunct Spanish restaurant in San Francisco, we have created our own recipe. These are easy to prepare and cook at home or prepare and take to a friend’s house to heat and serve.

Ingredients

1. One package of dates (approximately 20-24)
2. 4 ounces cambozola cheese or other soft cheese
3. Package of pine nuts
4. Harissa paste or sambal oelek (ground red chili paste)
5. Two packages of prosciutto slices or serrano ham slices (Spanish ham)
6. Box of toothpicks

Instructions

1. Preheat oven to 375º
2. Put aluminum foil on baking sheet to help in clean up
3. Butterfly each date lengthwise and de-pit – place on baking sheet
4. With a spoon scoop a teaspoon or so of cheese into the center of each date
5. Push a few pine nuts into the cheese
6. Place a drop of red pepper sauce on top
7. Pull the prosciutto slices apart to the width of the dates and wrap around the date securing with a toothpick.
8. Place in oven until the cheese melts, approximately 15 minutes

Notes

1. Mancheco cheese served with a little dab of quince paste which is found in the cheese section of the grocery store goes well alongside these dates as appetizers. Left over dates heat up well the next day and are just as delicious.
